Tatale; Ghanaian plantain pancakes

Ingredients

2 over ripe plantains

¼ cup corn meal

½ teaspoon ground garlic

½ teaspoon ginger

½ teaspoon fresh diced cilantro (or your favourite herb)

1 green onions stalk

1 teaspoon salt or to taste

I teaspoon ground pepper

Preparation:

1. Peal and cut plantain into smaller pieces

2. Mash plantain using a potato masher

3. Mix the corn meal into the mashed plantain

4. Add the herbs and spices and mix well

5. Pour up to four tablespoons of oil unto a pan; set stove to high

6. Scoop the mix into the hot pan

7. Cook each side for 2 minutes each

8. Serve hot 

Tips:

The basic tatale recipe can be varied to give you your desired distinct taste. For instance, herbs such as cilantro and parsley hardly feature in the traditional versions. Also, as opposed to cornmeal, you could use regular flour- plain or wheat- or other more healthy alternatives. Be adventurous, put your own spin into the recipe and let us know how great it turned out.
